It’s been two weeks since my last keto update and I feel like I’m fat-adapted now.
Progress
I lost another 1.6 pounds making the total 8.6 pounds. Downward progress is good! I should have my COVID 10 off by next update. 🙂
The big news is I started a walking program. My husband who was already walking joins me (and then does another walk later). We walked five days last week and the plan is 5-6 days a week moving forward with gradual increase in time.
Products
I didn’t buy any new “keto” products since the last update. I’m trying new to me products from the June KetoKrate which I’ll review in a later blog post.
I also ordered some prepared keto frozen meals from Five One Eight Kitchen which arrived last Friday. Expect to hear more about that also in an upcoming post.
Food and Recipes
There’s been a lot of cooking going on at our home including many recipes going into the keeper pile. A couple of meals were cooked in the slow cooker. The beef stew was delicious!
You can find the recipe for it in Crazy Busy Keto by Kristie Sullivan. I made a couple of changes; substituted a couple of carrots for the mushrooms and just put in 2 pounds of stew meat. The second slow cooker meal was pulled pork from another Kristie Sullivan cookbook; Keto Living Day by Day.
Both of these dishes used meat from my Butcher Box delivery. I then used some of the leftover pulled pork in my breakfast eggs a couple of times.
I used KLDBD cookbook (abbreviated from above) for broiled hamburgers. It’s the first time I cooked them this way and over did them but the seasoning was spot on!
There was steak of course each week. Once was using a Dream Dinners kit for cheese topped steaks. The second was a grilled ribeye. Other Dream Dinner kit meals included cod served with cauliflower fried rice and parmesan crusted chicken served with salad.
We had takeout from The Cheesecake Factory. Mine was a cobb salad with way too much tomatoes and lettuce which I didn’t finish.
And of course, there was dessert.
I made Strawberry Cream Pie from the Crazy Busy Keto cookbook and Keto Spice Cake with cream cheese frosting from Carolyn Ketchum.
Cooking Class
I took another cooking class on Chibo that was taught by Kristie Sullivan. This time we made deep dish keto pizza.
It was pretty good but it’s not my favorite crust.
My favorite is Sullivan’s Kedough crust.
Looking Forward
My meal plan for this week includes several of the frozen meals from Five One Eight Kitchen along with a couple of Dream Dinners Meal Kits. I think I’m just cooking one recipe entirely from scratch (plus a dessert).
