This week I’m not really having much of a meal plan. First there’s a business trip followed by a birthday dinner out and then a family event the next night. So, I’ll track what I eat and let you know next week.
Last Week’s Recap
Monday: Vegan Sloppy Joes with green salad
I loved this recipe from the Food Network; it uses mushrooms in place of meat. My husband not so much.
Tuesday: Shrimp Fajitas with Spanish rice
We forgot to pick up the rice from our nearby taco shop so we just skipped it. The tacos were delicious!
Wednesday: White Bean, Spinach and tomatoes over Penne Brown Rice pasta
This was a simple recipe that was healthy and delicious. Next time I will add more spices.
Thursday: Lamb Meatballs with Pita Bread, Hummus, Tzatziki Sauce & Salad
The meatballs were surprisingly easy to make and I loved the spinach salad.
Friday: Dinner Out
We had soup and salad at Souplantation. It’s a fairly inexpensive dinner and we can each get exactly what we want!
Saturday: Fish, fried potatoes and green beans
We decided to dine out Saturday instead of Sunday when brunch prices would double because of the holiday. I had a shrimp salad at Marie Callendars.
Sunday: Easter Brunch out
I made fish tacos at home for lunch and homemade vegetable soup for dinner.
Meal Plan
We picked up some frozen meals at the grocery store this weekend so that’s how our week is starting. My husband has his menu planned for when I’m away and one night involves steak!
Monday: Frozen Dinners
Tuesday: Sandwiches
Wednesday: Business Trip
Thursday: Business Trip
Friday: Business Trip
Saturday: Birthday dinner out
Sunday: Dinner at relatives
