I never did make a menu plan for last week but still was able to eat mostly healthy food if not homemade!
Last Week’s Recap
The saying “when you fail to plan you plan to fail” came true for me last week. I ended up only cooking dinner two nights out of seven!
Fortunately we had some health conscious frozen meals in the freezer or it could have been worse. The highlight of the week was this skinny margarita.
Monday: Bean and Rice burrito with whole wheat tortilla (takeout)
Tuesday: Meatless Vitapizza (frozen meal)
Wednesday: Trader Joe’s Quinoa with Vegetable Melange with a side of green beans
Thursday: Amy’s Spaghetti Italiano with meatless meatballs (frozen meal)
Friday: Souplantation (dinner out)
Saturday: Veggie enchiladas with black beans and rice, skinny Margarita (dinner out)
Sunday: Hearty Bean Stew with Sourdough Bread
The stew was delicious and we have lots of leftovers. It felt good to be cooking again!
Meal Plan
It was a relief to sit down and develop our dinner plans for week along with the grocery list yesterday. Here’s the planned menu.
Monday: Slow cooker lasagne with green salad
Tuesday: Leftovers
Wednesday: Mexibake casserole with green beans
Thursday: Spaghetti with meatballs, green salad
Friday: White fish, fried potates and corn
Saturday: Dinner out
Sunday: Broccoli Quiche with green salad
