It’s another Monday so that means another meal plan, right? I planned it out and shopped accordingly so the week should go well.

Let’s take a look back at last week’s plan. There were minor changes as you’ll see.
Monday: Slow cooker lasagne with green salad
Finally, I made a vegan meal my husband liked. I think it was the meatless ground beef that did it! This will go in our regular rotation and I’ll post the recipe soon.
Tuesday: Leftovers
Wednesday: Mexibake casserole with green beans
This became Saturday’s meal. Instead, we had Thursday’s night’s planned meal (I was confused). I had vegan meatballs and my husband had turkey meatballs. Tasty meal!
Thursday: Spaghetti with meatballs, green salad
We had spaghetti a second night.
Friday: White fish, fried potates and corn
This meal went exactly as planned. I highly recommend the White Fish Vera Cruz from Trader Joe’s.
Saturday: Dinner out
We didn’t go out but instead had Mexibake casserole vegan style. My husband said it topped the lasagna. I think it was the soy chorizo!
Sunday: Broccoli Quiche with green salad
There was a mixed reaction to the Broccoli quiche. I liked it but it was a no go for my husband. I steamed asparagus instead of having salad.

Monday: Tater Tot Hot Dish with broccoli
Tuesday: Leftovers
Wednesday: Tuna Noodle Casserole with green salad
Thursday: Burgers (vegan or beef) with oven fries
Friday: Greek Stuffed Peppers with roasted brussel sprouts
Saturday: Crockpot enchilada casserole
Sunday: Dinner Out

Looks great! I made burger, pizza, fried rice, and a couple of other things last week. We haven’t been keeping to our menu planning lately for some reason.
