Recap
Last week I had a business trip and then weekend celebrations so not a lot of cooking. Here’s how the week went.
Monday: Frozen Dinners
I had Amy’s Sweet & Sour Asian Noodle frozen entree. It was okay, but a pretty small portion.
Tuesday: Sandwiches
I got an email for a free birthday burrito from Rubio’s. I had the Health Mex Mahi Mahi burrito. It was very good!
Wednesday: Business Trip
My co-worker is a long time vegan so we went out for Indian food. It was the first time I’ve been in an Indian restaurant in a long time. This is Baingan Bharta with Spinach Paratha. If you’re in St. Louis, I highly recommend Rasoi!
Thursday: Business Trip
Italian restaurants are a good go-to for Vegetarian/Vegan fare and I had some delicious food at Bar Italia in St. Louis. This is a picture of the caponata appetizer with eggplant, pine nuts, and tomatoes. It was delicious!
Friday: Business Trip
Unfortunately, dinner was at the airport while waiting to board the flight headed back home. We ate at Chili’s Too and I had a black bean burger with a side salad.
Saturday: Birthday dinner out
We ate at Vintana, the restaurant over the car dealership. I had sauteed Mahi Mahi served over beans, artichoke hearts and fingerling potatoes. I thought those red chunks were sun-dried tomatoes. Turned out it was sausage which I did not eat.
Sunday: Dinner at relatives
We had a family dinner at my husband’s brother’s home. There were 13 of us and fortunately many vegetarian menu items. The main course was lamb which I did not eat. I filled up on fresh vegetables with hummus, corn, peas, and roasted root vegetables. She also had an excellent vegan dessert with chocolate in it!
Meal Plan
I’m traveling again later this week but it’s a personal trip to visit family in Kansas. I do plan to get some cooking in using my new Cookbook, The I Love Trader Joe’s Vegetarian Cookbook (affiliate link).
Monday: Minestrone Soup with bread sticks
Tuesday: Tempeh Meatloaf with fried potatoes and asparagus
Wednesday: Mexi-Bake Casserole, green salad
Thursday: Leftovers
Friday: Out of Town
Saturday: Out of Town
Sunday: Out of Town
