Where did last week go? When I was typing the title it was surprising to realize March starts this week. Are you ready for spring?
Recap Feb. 19-24
Monday: Dinner out at Souplantation
This is one of our favorite places for a tasty, casual dinner out. We can build our salads our way and choose from 6-7 tasty soups. I go for low-fat while my husband has the same two soups each time: Chicken Noodle (low-fat) and Clam Chowder.
Tuesday: Chicken Di Parma with Steamed Broccoli & Savory Orzo
I bought a daily deal from our newspaper for a meal delivery service. They deliver all the fresh ingredients and directions for one tasty meal in a box. This was the first one of two. It was more complicated than dishes I usually prepare but very tasty.
Wednesday: Ginger Beef Stir Fry with Jasmine Rice
This meal was a little easier to prepare and delicious as well. I wonder what makes jasmine rice different from regular white rice? It seemed the same to me. We hafve green beans on the side.
Thursday: Chicken Sausage, Beans and Rice
This was where the menu deviates big time form the plan. We used our code for a free 1 topping pizza from Papa John’s instead of cooking.
Friday: Mahi-Mahi with fried potatoes and green beans
I picked up Chef salads from Fresh and Easy for dinner. They’re only 300 calories each and we were ready for a light meal after the pizza. 🙂
Saturday: OPEN
I made Friday’s night dinner and it wasn’t Mahi-Mahi (forgot which fish was in the freezer) but white fish vera cruz from Trader Joe’s. I substituted corn for green beans.
Sunday: Pork Chops, baked potatoes, corn
I made the chicken sausage, beans and rice dish planned for Thursday. It was tastier than it looks in this picture. My husband asked me to put in more sausage next time. We had a green salad on the side.

Monday: Pork Chops, Baked Potato, broccoli
Tuesday: Shrimp Fajitas, flour tortillas and green salad
Wednesday: Steak, cous-cous, zucchini
Thursday: OPEN
Friday: Grilled chicken, tater tots, green beans
Saturday: Dinner out
Sunday: Meatloaf, brown rice, corn
I decided to leave Thursday open because I usually don’t want to cook this late in the work week. What’s your dinner plan this week?
