I will be getting a new “stock” image for Menu Plan Monday. It doesn’t seem right to have a plate with chicken on it when I don’t eat any meat.
Recap from Last Week
I’m not going to bother with a day by day recap of meals from last week. Not one day went as scheduled! We had so many leftovers from all the cooking the previous week, there were many nights of leftovers. Plus I decided to stop using seafood as a crutch. It was keeping me from eating a 100% plant-based diet.
We went out to dinner mid-week and I did have my veggie burger.
Saturday night I made the Greek Stuffed Peppers and they were really tasty!

We’re just about out of leftovers so I am ready to get cooking again.
Monday: Dinner out (it’s our 18th Wedding anniversary)
Tuesday: Crockpot Enchiladas with broccoli
Wednesday: Pasta with Tomato Zucchini Sauce, Green Salad
Thursday: Hummus & Avocado Wraps, Tortilla chips with salsa
Friday: Leftovers
Saturday: Roasted Vegetables with Mushroom Orzo
Sunday: White Bean and Spinach Soup, Sourdough bread

Yummm… I’m cooking Thai food this week. Sticky rick with Nam Prik Ong (a northern dish) today. The kid loves this dish. 🙂
