You might remember that last week’s meal plan included Slow Cooker Minestrone soup. It was the first time I made it and it was a success for a couple of reasons. First, it was delicious and second it was so easy! It was great to come home for work and have dinner just about done. Just add a salad and maybe bread for a complete meal.
Slow Cooker Minestrone Soup

Ingredients
- 1 pound stew meat
- 1/2 onion, finely chopped
- 1/2 cup celery, chopped
- 1 can diced tomatoes
- 1 teaspoon salt
- 1 cup water
- 1 can red kidney beans
- 2 teaspoons dried basil
- 1/2 teaspoon dried oregano
Instructions
- Combine all ingredients in the slow cooker and stir well.
- Cover and cook on low for 8-10 hours or high 4-5 hours.
