Saturday I attended a meeting of the San Diego low carb community. It was their fourth and my first but the room was overflowing with people. The agenda included presentations (and samples later) from local keto entrepreneurs including Luke’s ice cream (I couldn’t find a website), Keto Dessert Company and Pure Meal Prep.
There was a table where a keto baker, Lauren H., was selling keto treats and I bought a bag of peanut butter cookies that are fantastic!
I’ve put them in the freezer so I am not tempted to over eat and they don’t get stale before I get to them.
The keynote speaker was Dr. Ben Bocchicchio who spoke about high intensity exercise and low carb. He also was a speaker at the Low Carb USA San Diego conference last month (which I sadly missed due to travel). I want to get his book and learn more about his 15 minute program.
Progress
I broke into onderland this week and I think I figured out what was kicking me out of ketosis some mornings. I went back and looked at what I had eaten the day before and saw a trend. If I had too much protein, my ketones were less than .5 the next morning.
As a result I cut down on protein macros and ta-da stayed in ketosis every day! I also lost 1.6 pounds which ended a 3-4 week stall and brought my total weight loss to 12.8 pounds in two months.
New Products
I tried a couple of new products this week.
Parm Crisps
The deli section of my local Ralph’s store (Kroger brand) has a display of cheese crackers. I took a closer look last week and bought the basil pesto favlor of Parm Crisps.
Some cheese crackers have an overpowering taste, but these do not; the basil and pesto really gave it a great flavor too.
The size is good for dipping or eating them with meats or cheeses on top.
Parm Crisps are sold in five flavors and next time I plan to try Italian Herb. I would highly recommend these crackers for those that want the cracker crunch and taste.
Outer Aisle Cauliflower Sandwich Thins
I learned about about Outer Aisle Cauliflower Sandwich Thins from low carb websites and videos. We’re going to spend a week in Cancun soon and I didn’t want to take a bag of almond flour to make bread when I want it so decided to track these down and give them a try.
Fortunately, there are two stores close to me that sell the Outer Aisle sandwich thins and pizza crusts. I found these in the refrigerated breads area at Jimbo’s.
They were smaller than I hoped. You can use one for a taco like wrap, but need two for a sandwich.
My first use was for a tuna salad sandwich. I really liked how there wasn’t an eggy taste (like my 90 second bread) and they’re sturdy enough to hold up to the sandwich fillings. It was a win!
Although pricey at $6.99 a package of six, it is worth it to me for the convenience and clean ingredients.

The salame and cheese package was from the airport; many of them carry it now which makes traveling while keto easier. I just threw away the crackers.
I would not normally have three burgers in two days but when you’re traveling sometimes there isn’t a lot of options.
Looking Forward
This week brings another business trip but just two days and one night. At the end of week, we will be attending my son’s and his fiancee’s engagement party. Keto on!
